I flew with Air Tahiti before and so far it is my favorite airline when going from Paris to LA. CDG in Paris renovated their airport within the last year or so, so the waiting area before boarding is very nice - it is a good time to buy any last minute souvenirs or even relax in the lounge.
It is a little more festive going west than east, as when you get on board they give you a little flower. It is a nice way to start your vacation.
The food is decent for airline food. You could probably get there normal menu with no problem, but I opted to get their vegetarian option - it is healthier and you get served first if you order a special plate. The staff was also very good about making sure everyone stayed hydrated on the plane, as they came by often to offer you drinks and you didn't really need to go out of your way to ask them for something.
The entertainment was decent and you could spend the entire flight choosing what movies and tv shows you wanted to watch on demand. I guess my biggest complaint though was the messaging system from the captain was broken, in that the TV would not stop when the captain was speaking. The weird thing though was it was just on my side of the plane, as when I looked over to the center and right side seats it looked like the tv was functioning properly for them.
Besides the technical issue of having to manually turn my TV off to hear the captain, overall I give them an A for service. I do not think I'll be using another airline besides Air Tahiti between Paris and LA in the future if I can avoid it.
