On a long flight from LA to Paris (over 10 hours), service is not an area you want to skimp out on. I think I paid 200 euros more for the flight than the cheapest available, but it was a nonstop flight and the airline does a great job of taking care of you.
The flight wasn't completely full, and as I have a medical condition they were able to change my seat to a window upon request when I checked in. I was placed in the very last row, and I *think* the seats might have gone slightly farther back as well.
I ordered their vegetarian option, and even with the seat change they were able to find me and give me my ordered meal. In fact, if you order a special meal you do get served first in order to keep themselves organized. In the past I've had other airlines screw this up, so for me getting the right food was a win. For airplane food it was decent, not a gourmet lunch but better than what you will find on other airlines.
Entertainment was decent. You can choose TV shows, movies, games, and more on demand, although I wished they'd expand their selection a bit because many of the TV shows I watched on my flight over to LA earlier in January.
My biggest concern was I had a hard time hearing the announcements from the staff. The TV would pause, but the sound would not come through the earphones. You'd have to strain to hear what the flight attendant was saying, and some of them were a bit too soft-spoken and I couldn't make out what they were saying.
Overall a good flight. I'll be using Air Tahiti Nui again.
