After I had made my reservation, the prices on their site were suddenly lowered and the airline agreed to refund me the difference after a phone call.
This is the best compromise for a Paris - New York flight in eco premium, which is to say business-type club chairs from before the time of flat beds, so no feeling of suffocation, just comfort.
I was worried about the iPad entertainment system but it was largely just as good as an onboard screen would be, and offered very recent movies, letting me catch up on the films I'd missed during the past year.
The flight crew was very friendly and obliging, including the head cabin attendant, "Joseph." I haven't had this kind of service since some business class trips I took on Middle Eastern airlines.
On the other hand, the food was boringly good and that was it.
I was also worried about traveling on an old plane like the 757, but the flight was very comfortable and the pilots flew smoothly and "thoughtfully" as well.
The return flight was almost at the same level overall and allowed us to spend a comfortable night.
For less than €1000, it's really worth it.
I hope that they get some new planes and continue the adventure.
